In this study, we analyzed the nutrient composition and β-glucan content in Lentinula edodes fruiting bodies from different collection areas. Four types of free sugars were detected by HPLC, and the range of trehalose prevalence was 0.83% to 9%. The highest total amino acid content was observed from sawdust media cultivation of Lentinula edodes fruiting bodies, collected in China (JMI10050)The highest essential amino acid content, assessed by log cultivation of Lentinula edodes fruiting bodies, collected in Jangheung (JMI10059). Sixteen free amino acids were detected in Lentinula edodes fruiting bodies, and the major free amino acids were histidine, glutamic acid, and arginine. The highest essential amino acid including threonine, valine, methionine, isoleucine, leucine, phenylalanine, histidine, and lysine was fromsawdust media cultivation of Lentinula edodes fruiting bodies collected in China(JMI10052). The β-glucan content from log cultivation of Lentinula edodes fruiting bodies collected in Korea (JMI10059 and JMI10066) was higher than that from sawdust media cultivation of Lentinula edodes fruiting bodies collected in China. The highest β-glucan content was observed from log cultivation of Lentinula edodes fruiting bodies collected in Korea (JMI10066).

This study was performed to determine most appropriate mixed ratio of brewers dried grain to wheat bran as a nutrient supplement in the plastic vinyl bag cultivation of Grifola frondosa. In the examination of an appropriate nutrient source, the IV substrate formulation (80 : 10 : 10, oak sawdust : wheat bran : brewers dried grain) resulted in 71.6 days to harvest and the highest yield of 142.6 g/bag. On the other hand, the investigation of the optimal mixing ratio of beer waste to wheat bran showed that the III substrate formulation (80 : 5 : 15, oak sawdust : wheat bran : brewers dried grain) resulted in the least days to harvest (61.8 days), with the highest yield of 140.8 g/bag.

In this study, we observed differences in the fruit body genesis in with seasonal changes. The mushrooms generated different spines even when under same environmental conditions in equivalent growth chambers during different seasons. The growth chamber conditions were set at 18°, 1000 ppm CO and 95% humidity for uniform primordium formation. Following this, the humidity was reduced to 85% during growth and development. The characteristics of the fruit body were measured: yield (weight), length (size), hardness, and chromaticity. Each measure was relatively compared owing standard data for . We investigated the environmental factors to assess the cause of variation in fruit body. Change in temperature and humidity were especially focused on, apart from climate that can affect mushroom growth. It was observed that temperature and humidity both influence fruit body growth. Not the absolute value of the elevation, there was a change of climate which the temperature is lowered and lowered the humidity can be assumed that the changes in the environmental conditions inside the growth chamber the mushroom growth.

In the present study, we analyzed the amino acid and free sugar contentof Flammulina velutipes. We observed that the free sugar content in Flammulina velutipes increased under higher storage temperatures. However, the the packaging material had no effect on the sugar content. Higher storage temperature increased the level Among the packaging film materials tested for the storage of Flammulina velutipes, polyphenol oxidase. β-glucan level of Flammulina velutipes by variation in the packaging film material or storage temperature. We suggest that the β-glucan content is not an acceptable to mushroom storage standards.

Basidiomycetous fungi are one of the most potent biodegraders because many of its species grow on dead wood or litter, in environments rich in lignocellulose. For the degradation of lignocellulose, basidiomycetes utilize their lignocellulytic enzymes, which typically include laccase (EC 1.10.3.2), lignin peroxidase (EC 1.11.1.14), xylanase (EC 3.2.1.8), and cellulase (EC 3.2.1.4). In recent years, the practical applications of basidiomycetes have ranged from the textile to the pulp and paper industries, and from food applications to bioremediation processes and industrial enzymatic saccharification of biomass. Recently, spent mushroom substrates of edible mushrooms have been used as sources of bulk enzymes to decolorize synthetic dyes in textile wastewater. In this review, the occurrence, mode of action, general properties, and production of lignocellulytic enzymes from mushroom species will be discussed. We will also discuss the potential applications of these enzymes

A new commercial strain of oyster mushroom (was developed by hyphal anastomosis, and was improved byhybridization between a monokaryotic strain derived from Pleurotus ostreatus ASI 0635 (Gonji 7ho) and a dikaryotic strain derived from P. ostreatus ASI 0666 (Mongdol). The optimum temperatures for mycelial growth and fruiting body development were 25~30oC and 12~18oC, respectively. When PDA (potato dextrose agar medium) and MCM (mushroom complete medium) were compared, mycelial growth was faster in MCM. Similar results were observed with the control strain P. ostreatus ASI 2504 (Suhan 1ho). Analysis of the genetic characteristics of the new cultivar (‘Gosol’) showed a different DNA profile from that of the control ASI 2504 strain, when RAPD (raurpDNA) primers URP1, 2, 3, and 7 were used. Fruiting body production per bottle was approximately116 g based on a production performance test. In addition, yields from a farm field trial were stably achieved in an inadequate production enviro. The color of the pileus was blackish gray, and the stipe was long and thick. Therefore, we expect that this new strain will satisfy consumer demand for high quality mushrooms.

Pleurotus eryngii is one of the most widely cultivated and important edible mushrooms. However, the shelf life of the fruiting body is short, which . To solve this problem, a new cultivar, DanBi 5Ho, of Pleurotus eryngii was developed by monomono crossing between monokaryotic strains derived from KNR2598 and KNR2610. The optimum temperature formycelial growth was 25 and that forfruiting body development was 15–16. The quality did not change after a period of 40.0 d at 4. This result was significantly different compared to that ofthe control strain Knneuari 2 Ho. Analysis of genetic characteristics of the new hybrid strain DanBi 5Ho revealeda different profile thanthat of the parental and control strains when random amplification of polymorphic DNA (RAPD) primers we used. The results obtained from this study show that DanBi 5Ho is a new hybrid strain, characterized by improved storability after harvesting.

A new method to utilize spent mushroom substrates (SMS) for ethanol production was investigated. Analysis of the chemical properties of SMS revealed that they were decomposed by the mushrooms during cultivation. In particular, the free sugar content in SMS was reduced to half of that in mushrooms. Of the tested SMS, the Pleurotus eryngii SMS was determined to be suitable for saccharification. Upon pretreatment with a 1% alkaline solution, Pleurotus eryngii SMS achieved 80.7% of its maximum saccharification ratio. The optimum pretreatment conditions for enzyme saccharification were 1% NaOH solution at 120° for 60 min. Further studies are required to determine ethanol production using Pleurotus eryngii SMS.
