The multiple functions of mushrooms are production of antibiotics, fodder for animal stock, organic fertilizers, food nutrients, favorite food, physiologically active materials, and decomposing organic matters, and cleaning environmental pollutants. Of these first three functions were evaluated. The value of the muti- functions of mushrooms were estimated to be 112 trillion 922 one hundred million Won, and if non-evaluated ones added the estimation would be doubled. This value is similar to multi-functions value of rice, 100 trillion Won. Especially, the industrial value of antibiotics from B-glucans is estimated to be 112 trillion Won, while animal stock fodder value is 618 one hundred million Won, organic fertilizer 56 one hundred million Won and decomposer of ecology 360 one hundred million Won.

A new commercial strain of Agrocybe chaxingu, “Dasan”, was developed with crossing between monokaryotic strain derived from Jinhyang and GWM20502 strain. The optimum temperature, carbon source and nitrogen source for mycelial growth were 25~30℃, glucose and ammonium chloride, respectively. The period of primordia formation and fruiting body growth were about 12~13days and 6~8days in bottle cultivation using Georgia pine sawdust which supplemented with 30% wheat bran. The yields was 118.2g/850mL bottle, and the color of pileus was brown.

The word spawn is derived from an old French verb, espandre, meaning to spread out or expand. Spawn is also defined as “the mycelium of fungi, especially of mushrooms grown to be eaten, used for propagation.” The effects of bag spawn to sawdust substrate on the growth of Pleurotus ostreatus were conducted. The duration of mycelial growth and days of pinhead formation of bag spawn(2.5kg) were 18~19days and 7~8days, whereas bottle spawn (1,000㎖) was 18days and 6days, respectively. The yield of mushroom fruitbody was that bag spawn is 100~118g, bottle spawn is 95~115g. In economical analysis, bag spawn is increased to 50%, compared to bottle spawn in relative income.

Sparassis crispa(Cauliflower mushroom) was an edible mushroom that shows remarkably high contents of 1.3-β-Dglucan compared to other edible mushroom. The mushroom was known to give high antitumor and immunology activated, and then this mushroom was recently cultivated in Japan and Korea. However, cultivation methods ware becoming kept in secret or patents by some companies with complicated procedures. And it was not established cultivation methods of Sparassis crispa up to now. This study was conducted to solve the problem by short-log cultivation method of Sparassis crispa. Some factors effecting on the mycelial growth and primordial formation of Sparassis crispa were investigated. We could produce the mushroom using short-woods of Larix leptolepis, Pinus densiflora, Pinus rigida and Quercus acutissima. We get to high yield fruit-body on short-log cultivaiton of Pinus rigida. And soaking for 8hours in water solution containing 5% uncooked yeast with short-wood of Pinus rigida. The optimal moisture content and temperature were 90~95% and 23~25℃, respectively.

충북지역에서 수집한 야생 팽나무버섯의 식품소재로의 가능성을 조사하기 위해 동결 건조한 후 일반성분 및 전자공여능, 총폴리페놀 함량, ACE 저해도와 α-glucosidase 저해도등 생리활성을 분석하였다. 대조군으로 갈뫼팽이버섯과 4종의 수집 야생 팽나무버섯의 일반성분은 건물중으로 분석하였으며, 조단백질은 17.1~21.3 g/100g, 조지방은 4.1~4.9 g/100g, 탄수화물은 65.9~70.5 g/100g, 조섬유는 7.9~18.1 g/100g, 조회분은 5.7~8.4g/100g 범위를 나타내었다. 전자공여능은 63.35~69.31%로 시료간 큰 차이가 없는 것으로 나타났으며, 총폴리페놀 함량은 9.83에서 11.14 mg/g로 대조구와 유사하였다. ACE 저해도는 대조구인 갈뫼 팽이버섯과 수집종인 CBMFV-02가 각각72.91%, 71.44%로 높은 값을 나타내었으며, α-glucosidase 저해도는 CBMFV-01이 46.55%로 가장 높은 값을 나타내었다.
In this study, for the development of useful food materials, the proximate composition(total carbohydrates, crude fiber, crude protein, fat and ash) and biological activities(electron donating activity, total polyphenol contents, ACE inhibitory and γβ-glucosidase inhibitory effects) were determined in the Garlmoe and the four wild Flammulina velutipes. As a results, the dry matter of mushrooms contained large amounts of carbohydrates, from 65.9 to 70.5 g/100g dry weight. the wild collected Flammulina velutipes proved to be an especially good source of crude fiber(7.9~18.1 g/100 g dry weight). Crude protein, fat, and ash contents of the mushrooms ranged 17.1~21.3, 4.1~5.2, and 5.7~8.4 g/100g dry weight, respectively. The electron donating activity ranged from 63.35 to 69.31% and total polyphenol contents ranged from 9.83 to 11.14 mg/g in these mushrooms. ACE inhibitions were high in Garlmoe and CBMFV-02 strain. αβ- glucosidase inhibition was the highest in CBMFV-01(46.56%) strain and lowest in Garlmoe(15.91%).

This study was carried out to analyze the genetic relationships among 22 strains of Sparassis crispa, which were collected from various regions of worldwide. The cleaved amplified polymorphic sequence were obtained from the ribosomal DNA ITS regions of each strain. Based on the sequence analysis, the presence of five different groups were observed. Most strains shared the high nucleotide sequence similarity (about 90%) to each other, except only one strain, KACC50866. Nucleotide sequence similarity of KACC50866 was below 10% to other strains, indicating the genetic relatedness of strain KACC50866 was low compared to other strains. More works such as mitochondria genome analysis should help to determine the precise genetic diversity of S. crispa strains.

The effect of wheat straw mix was tested to develop rice straw replacement media. The chemical contents were analysed after late fermentation. Nitrogen content and C/N ratio of the 20% wheat straw mixing medium were 2.2% and 16.7 and the only rice straw using medium were 2.0% and 17.9, respectively. When the 20% wheat straw mixing treatment was compared to the only rice straw medium, pinhead initiation period was shortened and the yield was increased as much as 30%. Therefore the 20% wheat straw mixing medium is expected to replace the rice straw medium.

This study was carried out to develop the best medium of new oyster mushroom for bottle culture. The new oyster mushroom cv. Miso is a Pleurotus ostreatus developed at the Chungnam Agricultural Research & Extension Services. For the bottle culture media, poplar sawdust+beet pulp+cottonseed meal (5:3:2), poplar sawdust+wheat husk meal (8:2), poplar sawdust+beet pulp+cottonseed meal (6:2:2), poplar sawdust+beet pulp+cottonseed meal (4:4:2), and poplar sawdust+beet pulp+wheat husk meal (7:1:2) were used in 850cc PP bottle. The pH was 5~6 and the C/N ratio 19.7~28.3 in bottle culture media. The time of pinhead formation was 5 to 6 days. For the fruiting body formation after inoculation took 29~31 days. The yield of fruiting body of poplar sawdust+beet pulp+wheat husk meal (7:1:2) medium was the highest at 110.4g/bottle compared to other media. Therefore, such cultivation medium would be appropriate for the commercial production of bottle culture in the new oyster mushroom ‘Miso’.
