This study aims to operate a convergence education model that integrates basic digital literacy and competencies for responding to climate and ecological environment changes through traditional fermented food culture. The study further seeks to derive educational implications for learners' sustainable dietary competencies and global citizenship across elementary, middle, and high school Practical Arts (Technology and Home Economics) education through a case analysis of this model. To achieve this, the multidimensional framework of Traditional Ecological Knowledge (TEK) was reconstructed to align with educational contexts, and an international exchange project based on digital technologies was structured and implemented for high school students in South Korea and Taiwan. In the project structured according to the Project-Based Learning (PBL) model, learners explored the ecological knowledge embedded in fermented foods by exchanging Korean kimchi and Taiwanese paocai via Padlet. Additionally, through hands-on practices of making traditional fermented foods (kimchi and paocai) and content creation processes using generative AI, they experientially internalized traditional ecological knowledge. The data collected during these project operation processes were qualitatively analyzed using the essence of Practical Arts education—practical living subject, creative craftsmanship subject, and integrative problem-solving subject—as the analysis criteria. The findings exploratorily confirmed the potential for learners' ecological re-awareness of traditional knowledge and improvement of creative problem-solving skills using digital tools. These results indicate possibilities for expansion across various school levels based on structural linkages with the elementary, middle, and high school Practical Arts (Technology and Home Economics) curriculum. On the other hand, challenges including the complexity of fermented food making, technical gaps in using digital tools, and constraints of asynchronous communication were identified as tasks requiring future improvement. This study presents a glocal convergence education model that bridges tradition and technology, and local and global contexts, thereby establishing the practical directions and theoretical foundation for future-oriented Practical Arts education.

이 연구는 전통 발효 식문화를 소재로 디지털 기초소양과 기후·생태환경 변화 대응 역량을 통합한 융합교육모델을 운영하고, 그 사례 분석을 통해 초·중·고 실과(기술·가정) 교육 전반에서 학습자의 지속가능한 식생활 역량 및 글로벌 시민성 함양을 위한 교육적 시사점을 도출하는 데 목적이 있다. 이를 위해 전통생태지식의 다차원적 범주 체계를 교육적 맥락에 맞게 재구성하고, 에듀테크 기반의 국제교류 프로젝트를 구성하여 한국과 대만의 고등학생을 대상으로 적용하였다. 프로젝트 기반 학습 모형에 따라 구성된 프로젝트에서 학습자들은 패들렛을 활용해 한국의 김치와 대만의 파오차이를 교류하며 발효음식에 내재된 생태적 지식을 탐구하였다. 또한 전통 발효음식(김치·파오차이) 만들기 실습과 생성형 AI를 활용한 콘텐츠 제작 과정을 통해 전통생태지식을 체험적으로 내면화하였다. 이러한 프로젝트 운영 과정에서 수집된 자료를 실과교육의 본질인 실천적 생활교과, 창조적 노작교과, 통합적 문제해결교과를 분석 준거로 하여 질적으로 분석하였다. 연구 결과, 본 연구는 학습자의 전통 지식에 대한 생태적 재인식과 디지털 도구를 활용한 창의적 문제해결 역량 향상 가능성을 탐색적으로 확인하였으며, 이러한 결과는 초·중·고 실과(기술·가정) 교육과정과의 구조적 연계를 바탕으로 다양한 학교급으로의 확장 가능성을 시사한다. 한편 발효음식 제작의 복잡성, 디지털 도구 활용의 기술적 격차, 비동기 소통의 제약 등은 향후 개선이 필요한 과제로 나타났다. 이 연구는 전통과 첨단, 로컬과 글로벌을 연결하는 글로컬 융합교육 모델을 제시함으로써, 미래 지향적 실과(기술·가정) 교육의 실천적 방향성과 이론적 토대를 마련하였다는 데 의의가 있다.
