This thesis looks into Jang Gye Hyang’s and Lee Bing Huh Gak’s viewpoints of food. As many know, Jang Gye Hyang wrote EumSikDiMiBang, the first Korean written cook book, in 1670ish, and Lee Bing Huh Gak wrote GyuHapChongSeo, a Korean written encyclopedia for home life, in 1809 of which the 1st book, JuSaEui, is a cook book. Both they are Korean written cook books but they both clearly show big differences between them. Jang Gye Hyang is an only daughter of Gyeong Dang Jang Heung Hyo so-called the direct heir of Toi Gye School, so that she had lived all her life for Ji Gyeong (持經, studying Confucian classics all the time) under the influence of her father who had fully fulfilled Toi Gye Lee Hwang’s ideology of Gyeong (敬, sincere and faithful to righteous matter all the time), and she married Seok Gye Lee Si Myeong, a student of her father, when she was 19 years old, which means that she had been positioned under the Neo-Confucian academic tradition at homes both before and after marriage. On the other hand, Lee Bing Huk Gak’s father is Lee Chang Soo who was once the governor of Pyeong Yang, and her mother was from Mun Hwa originated Yoo’s family and the paternal aunt of Yoo Hee, the author of EonMunJi. That is, her mother is a sister of Yoo Han Gyoo, Yoo Hee’s father. It is Yoo Han Gyoo, the husband of Lee Sa Joo Dang who wrote TaeGyoShinGi. That is, Lee Sa Joo Dang is Lee Bing Huh Gak’s maternal uncle’s wife. When Lee Bing Huh Gak was 15 years old, she married Seo Yoo Bon whose grandfather is Seo Myeong Eung, a Silhak scholar, and Seo Yoo Goo, the author of YimWonGyeongJeJi, is the younger brother of Seo Yoo Bon. Seo Yoo Goo is said to learn from his elder brother’s wife who is Lee Bing Huh Gak when he was little. As shown above, EumSikDiMiBang weighs largely on liquor, fish and meat essential for guest reception and family ritual because Jang Gye Hyang lived under Neo-Confucian home tradition both before and after marriage while JuSaEui focuses more on folksy food such as Kimchi rather than liquor, fish and meat because Lee Bing Huh Gak was positioned under Silhak tradition both before and after marriage.

이 논문은 장계향(張桂香)과 이빙허각(李憑虛閣)의 음식관을 고찰한 글이다. 주지하다시피 장계향은 1670년경 우리나라 최초의 한글 조리서인 『음식디미방』을 저술하였으며, 이빙하각도 한글로 ‘가정생활 백과사전’인 『규합총서』를 1809년 저술하였는데, 이 『규합총서』 가운데 제 1편 인 ｢주사의(酒食議)｣가 바로 조리서이다. 그러나 이 두 책은 한글 조리서임에도 불구하고 확연한 차이가 있다. 장계향은 퇴계학파의 적통으로 불리는 경당(敬堂) 장흥효(張興孝)의 외 동딸로, 퇴계(退溪) 이황(李滉)의 경(敬) 사상을 몸소 실천한 아버지의 영 향으로 일생동안 지경(持經)의 삶을 살았으며, 19살 때 아버지의 제자인 석계(石溪) 이시명(李時明)에게 출가해, 친가(親家)와 시가(媤家) 모두 성 리학적 학풍에 놓여 있었다. 이에 반해 이빙허각의 아버지는 평양감사를 지낸 이창수이고, 어머니는 언문지의 저자인 유희(柳僖)의 고모이며, 유희의 아버지인 유한규(柳漢奎)와는 남매지간이다. 특히『태교신기』를 지은 이사주당(李師朱堂)의 남편이 유한규이므로 이사주당은 이빙허각 의 외숙모가 된다. 이빙허각은 15세 때 서유본(徐有本)과 결혼하였는데, 서유본의 조부가 실학자인 서명응(徐命膺)이며, 『임원경제지』를 지은 서 유구(徐有榘)는 서유본의 아우로, 서유구는 어려서 형수인 빙허각에게 글을 배웠다고 한다. 이처럼 장계향은 친가와 시가 모두 성리학적 가풍에서 생활하였기 때 문에 『음식디미방은 ‘접빈객⋅봉제사’에 필수적인 ‘술과 어육류’의 조리 가 많은 비중을 차지하였다면, 이빙허각은 외가와 시가가 실학적 가풍 에 놓여 있었기 때문에, 그의 ｢주사의｣는 ‘술과 어육류’ 보다 ‘김치’와 같 은 서민적인 조리가 많은 비중을 차지하고 있다.
