Due to rapid development in recent years, food trucks have evolved from their initial function as simple mobile eateries to become essential elements of modern urban culture. Furthermore, the number and popularity of food trucks have surged significantly, driven by related television programs and the advent of the Covid-19 pandemic. Nevertheless, research investigating the choice attributes or preferences of food truck visitors remains limited. Therefore, this study examines the impact of food consumption values, food truck usage contexts, and consumers’ demographic characteristics on the likelihood and frequency of food truck usage. To achieve this, an online survey was conducted, and a double-hurdle model was employed to identify differences in food consumption values, food truck usage contexts, and demographic characteristics between food truck users and non-users, as well as to determine the factors influencing the frequency of food truck visits. The findings of this study confirm that food as a necessity, lack of time to eat, and exposure to food truck advertising were confirmed as variables that distinguish between food truck visitors and non-visitors. This indicates that food trucks serve a purpose beyond merely providing a meal option, and may be preferred when they align with an individual's daily schedule. Further, the findings indicate that the desire to enjoy an experience and the visibility of food trucks were significant factors influencing the frequency of food truck visits. This suggests that the distinctive experience and convenient access offered by food trucks play an important role in increasing consumer patronage. These findings are analyzed to explore their implications for developing a sustainable growth strategy for the food truck industry. Additionally, as an exploratory study, this research suggests some potential avenues for future research.

최근 빠른 발전으로 인하여 푸드트럭은 단순한 이동식당이라는 초기의 기능을 넘어서 현대 도심의 문화를 구성하는 필수 요소로 자리 잡고 있다. 또한, 푸드트럭과 관련한 방송 프로그램이나 코로나19 팬데믹으로 인해 푸드트럭의 수와 인기는 급격히 증가하였다. 그럼에도 불구하고 푸드트럭 방문객의 선택속성이나 선호 도를 조사한 연구는 여전히 부족한 실정이다. 이에 본 연구는 음식 소비 가치, 푸드트럭 이용 상황, 소비자의 인구통계학적인 특성이 푸드트럭 이용 여부와 이용횟수에 미치는 영향을 조사하였다. 이를 위해 본 연구는 온라인 설문조사를 실시하였으며, 더블허들 모형을 활용하여 푸드트럭 방문자와 비방문자 간의 음식 소비 가치, 푸드트럭 이용 상황, 인구통계학적인 차이를 확인하고, 푸드트럭 방문 빈도에 영향을 미치는 요인을 파악하였다. 연구 결과, 푸드트럭 이용 여부에 영향을 미치는 변수로는 필수적인 음식 가치, 식사 시간이 부 족할 때, 그리고 푸드트럭 광고를 본 경험이 중요한 요인으로 나타났다. 이는 푸드트럭이 단순한 식사 해결 수단을 넘어, 일상에서 시간적 제약을 겪을 때 더욱 많이 이용된다는 점을 시사한다. 또한, 푸드트럭 이용 횟수에 영향을 미치는 변수로는 푸드트럭을 직접 봤을 때와 즐거운 경험을 원할 때가 중요한 요인으로 확인 되었다. 이는 푸드트럭이 소비자들에게 제공하는 독특한 경험과 즉각적인 접근 가능성이 이용 횟수를 증가 시키는 핵심 요인임을 보여준다.
