This study intends to propose a small independent restaurant operation model (SIROM) that can maintain profitability while minimizing damage to small independent restaurant(SIR) operators even in a crisis similar to the COVID-19 pandemic. The SIROM proposed in this study was derived through theoretical review, exploratory research, and research trend analysis on restaurant selection attributes. Each type of SIROM was classified based on seven characteristics: operation type, selection attribute, kitchen type, location, start-up cost, operating cost, and risk management ability. This study has theoretical implications in that it expanded the scope of research in the field of SIROM by expanding the focus of previous studies on a stable restaurant environment into a crisis. It is also expected to have practical implications for securing the competitiveness of SIRs by presenting the characteristics of each type of operating model according to the manager's experience level and start-up cost budget. The limitation of this study is that the researcher's subjective judgment was used to select key-keyword extraction through topic modeling analysis. Therefore, it needs to find a more efficient topic extraction method in the following studies.

본 연구는 COVID-19 범유행과 유사한 위기 상황에서도 소규모 독립 레스토랑 운영자의 피해를 최소화하면서 수익성을 꾸준히 유지할 수 있는 소규모 독립 레스토랑 운영모델을 제안하고자 한다. 본 연구에서 제안한 소규모 독립 레스토랑 운영모델은 레스토랑 선택속성에 대한 이론적 고찰, 탐색적 연구, 그리고 연구 동향 분석을 통해 도출하였다. 소규모 레스토랑 운영모델 유형별 특성은 운영 유형, 선택속성, 주방 유형, 위치, 창업비용, 운영 비용, 그리고 위기대처능력의 7가지 특성을 기준으로 분류하였다. 본 연구는 안정적인 시장환경에서의 레스토랑 운영에 관한 선행연구의 초점을 위기 상황으로 확대하여 SIROM을 제안함으로써 SIROM 분야의 연구 범위를 확장하였다는 점에서 이론적 시사점이 있다고 판단한다. 한편, 경영자의 경험 정도와 창업비용 예산에 따라 적절한 운영모델을 선택할 수 있도록 운영모 델의 유형별 특성을 제시함으로써 소규모 독립 레스토랑의 경쟁력을 갖추는데 매우 중요한 전략으로 활용될 수 있다는 점에서 실무적 시사점을 기대한다. 본 연구의 한계점은 연구 동향 분석에서 토픽 모델링 분석을 통해 도출된 키워드를 압축하는 과정에서 연구자의 주관적인 판단이 개입되어야 한다는 점이다. 따라서 후속연구에서는 더욱 계량화된 토픽 추출방법을 적용할 수 있을 것으로 기대한다.
