Spent mushroom substrate (SMS) is the post-harvest substrate and includes a variety of bioactive substances such as extracellular enzymes, antibiotics, secondary metabolites and carbohydrates produced during mycelium and fruiting body formation in substrate media. It is estimated that about 2.5 million tons of SMS are generated as agricultural waste in Korea. In this study, This study aim to investigate antioxidant and antibacterial activity in extracts from SMSs of Hericium erinaceum, Hypsizigus marmoreus, Pleurotus eryngii. Extract from SMS of Hypsizigus marmoreus showed the highest polyphenol content, DPPH radical scavening activity and antibacterial activity. Thus, results suggest that the SMS can be used as an useful material for extracting bioactive substance.
