This article aims to trace the life of Maestro Martino, who worked as a cook in the 15th century in today’s ‘Italy’, and to examine the meaning of his recipe manuscripts. As a native of a small mountain village in today’s Canton Ticino in Switzerland, he started his career as a cook in Milan. He served later in Rome as a cook for Cardinal Patriarch of Aquileia, Lodovico Scarampi Mezzarota, and he also served as a cook for Milanese captain of the mercenary, Gian Giacomo Trivulzio. His five remaining recipe manuscripts were written in vernacular Italian, but most of his recipes were included in the first European gastronomic printed book, De honesta voluptate et valetudine(On Honest Pleasure and Good Health) . The author Bartolomeo Sacchi, called Platina, acknowledged the source of his recipes too. Thanks to the book’s success throughout Europe, the recipes of Martino were also widely spread. This shows a change for more advanced cookbook(s) and a gradual shift to a new society in Europe. At the same time, Martino’s manuscript also challenges understanding of Europe from a new perspective as contact zones.

이 글의 목적은 오늘날의 ‘이탈리아’에서 15세기에 활동했던 요리사 마르티 노의 삶을 살펴보고 그의 이름으로 남겨진 요리 필사본들의 의미를 짚어보는 것이다. 오늘날 스위스의 칸톤 티치노에 속하는 작은 마을 출신인 그는 밀라노 에서 요리사로서의 경력을 시작했고, 이후 아퀼레이아 대주교 로도비코 스카람 피 메자로타와 용병대장 잔 자코모 트리불치오의 요리사로 활동하며 일련의 요 리 필사본들을 제작했다. 이후 이 필사본들이 담고 있는 요리법들이 당대의 인 문주의자인 바르톨로메오 사키, 일명 플라티나의 책에 포함되어 유럽 각지로 확 산되며 마르티노의 요리법 또한 널리 전파된다. 이것은 보다 발전한 요리책으로 나아가는 흐름의 변화 및 새로운 사회로 점차 전환하는 당대 유럽의 모습을 보 여준다. 그러나 동시에 마르티노의 필사본은 당대의 유럽을 새로운 접경의 관점 에서 이해해야 하는 과제를 던지고 있다.
