This paper is about background and origin of Haejanggook and its process to become a one-pot meal. It is originated from Jumak, a place that supplied bed and meals in the late Joseon dynasty when Bobusang (vendors) who traded and sold goods in markets held once 5 days used the Jumak in the markets. The Jumak was classified into 3 types, lodgment, bar, or restaurant as Japan wanted to impose tax to the Jumak during the period of Japanese colony. After independence of Korea, people opened restaurants that sold Gukbop (a soup that has rice in it) at Nambu market in Jeonju. One of the Gukbop was Congnamul (bean sprout) gukbop. It was a soup that people who worked in the market early in the morning ate after work and named Haeganggook. In the late 1960s, western entertainment came to Korea and a lot of clubs were opened. Many people drank at the clubs all night since there was a midnight curfew set nationwide and next day they went to Congnamul gukbop restaurants to eat breakfast. Thus, Congnamul gukbop, a Haejanggook that used to be a meal for workers who wanted to have food after hard work has become an one-pot meal for people who drink at night and want to eat some food for hangover.

이 논문은 해장국의 출현 배경과 전개 과정에 관한 글이다. 해장국의 발생은 조선후기 주막거리이다. 조선 후기 5일장의 발달 과정에서 보부상들이 활동 근거지로 장시주막(場市酒幕)을 활용하면서 장시국밥이 태동한다. 주막은 일제강점기에 조선총독부의 주도하에 숙박업과 주점과 음식점으로 분화된다. 주막 분화의 직접적 요인은 일제의 식민재정 확보를 위한 세금 부과의 방편이었다. 해방이후 장시의 현대화 과정에서 전주 남부시장에 국밥집에 들어선다. 콩나물국밥은 농산물, 해산물, 청과물 등 새벽경매장에서 일을 하던 장꾼들이 해장에 먹는 간이음식이었다. 새벽녁 장꾼들이 먹던 해장국은 1960대말 서구의 유흥문화가 들어오면서 도심 곳곳에 나이트클럽이 들어섰다. 당시 야간 통행금지로 인하여 나이트클럽에서 밤새워가며 술을 마신 술꾼들이 속쓰림을 풀기 위하여 새벽 콩나물국밥집을 찾게되면서 술꾼들의 속풀이 해장국으로 변모하였다. 이와같이 해장국은 처음에는 장시에서 새벽에 땀흘려 가며 일을 하던 장꾼들의 국밥었다면, 현재는 과음한 다음날 아침 술꾼들이 먹는 국밥으로 정착한상태이다.
