This paper was studied on the aspects of liquor culture through the examples of liquor seen in “Utsuhomonogatari” in the Heian Age. Among a large number of classical works and documentary records written in the same age, it is worthy of attention that “Utsuhomonogatari” had 58 examples of liquor in excess compared with those of other classical works or documentary records. As the noblemen in the Heian Age avoided to record in detail foods and drinking liquor in the documentary records because they thought it mean to recocrd them in the documentary records, it matters a little to research foods or drinking liquor through the documentary records in the Heian Age due to lack of materials. However, since side dishes for liquor, foods, wine glasses, and so on were described in detail in “Utsuhomonogatari,” it is proper to study foods or liquor culture in the Heian Age. Among the examples seen in “Utsuhomonogatari,” we can see a content about the building of making liquor, ‘Sakadono’. ‘Sakadono’ was seen in the description of the mansions of the noblemen in “Utsuhomonogatari,” and we can ascertain that ‘Sakadono’ for making liquor was contained in the mansion structure of the noblemen. Moreover, in connection with the banquet, since the descriptions of setting the table for liquor or the expressions of side dishes for liquor and so on in “Utsuhomonogatari” were seen variously, they played important roles as research materials. Mainly mentioned side dishes for liquor were fruits, dried meat, dried fishes, boiled rice, rice cakes, raw foods, and so forth. Besides, as “Utsuhomonogatari” is the story of the upper noblemen, the tastes of the noblemen were well described in the text. The noblemen, due to liquor, were very interested in literature and they played the musical instruments until sunset. And these scenes were well described in the text, too. We can feel well the tastes of the noblemen enjoying liquor in the scenes that when a party wrote ‘waka’, a kind of Japanese traditional poems, on the wine glass of the other party, he wrote back answering ‘waka’ on the wine glass of the party. And we can also see the scenes of precaution that one should not drink liquor too much in the text.

본고에서는 『우쓰호모노가타리』에 보이는 ‘酒’에 관해 고찰했다. 『우쓰호모노가타리』에는 酒에 관한 용례가 58개로 동시대 다른 문헌에 비해서도 압도적으로많으며, 술을 만드는 장소나 술안주 등에 대한 묘사도 자세하다는 점에 주목했다. 『우쓰호모노가타리』가 쓰인 헤이안시대는 음식에 대해 언급하는 것을 천하게 여겨 기피했기 때문에 문헌에서 음식에 대한 정보를 찾기가 힘들다. 그런 점에서 『우쓰호모노가타리』에는 음식에 대한 묘사나 술에 대한 용례가 많기 때문에 술안주나 음식·술잔 등의 묘사에서 당시의 술문화에 대한 정보를 얻을 수 있다는 점에서 귀중하다. 물론 모노가타리란 허구의 이야기이므로 이 정보를 가지고 당시의 술문화에 대해 확신하기는 어렵지만, 당시의 시대배경을 바탕으로 해서 모노가타리가 쓰인 것은 분명하므로 술문화나 술과 함께 한 음식 등에 대한자료로서의 역할을 충분히 한다고 볼 수 있다. 특히 『우쓰호모노가타리』에 등장하는 용례 중 ‘사카도노[酒殿]’는 술을 만들기위한 건물인데 다른 문헌에서 자세한 언급을 보기 힘든 내용이다. 또한 酒宴에관련해서 술에 관련된 상차림에 대한 묘사나 술안주에 대한 내용 등은 당시의 문화를 파악하는데도 중요한 역할을 한다. 또한 『우쓰호모노가타리』가 상류귀족들의 이야기인 만큼, 귀족들의 술을 즐기는 문화와 술을 통해 즐겼던 풍류생활 등이 잘 표현되어 있다. 또한 술을 지나치게 마시는 것에 대해서 경계하는 내용 등을 통해 당시 술에 대한 사람들의 인식을 파악할 수 있다.
