The age of population of the United States is increasing, and, subsequently, the need of home–delivered meal programs and congregate meal-service programs for the elderly is also increasing. The present study is aimed (1) to investigate the specific quality factors affecting the recipients’ satisfaction with meals and service from Meals-On-Wheels, (2) to test how quality factors affect recipients’ positive emotional and attitudinal behavior. A factor analysis identified two dimensions to affect satisfaction and behavioral intention: food quality and service quality. In order to determine the relationship between two predictors and outcome variable, a hierarchical multiple regression was conducted, and the results showed that two quality factors were highly related to satisfaction, as well as recipients’ positive behavioral intention. The results also indicated that the food quality factor had more significant influence on recipients’ satisfaction and behavioral intention compared to service quality. Therefore, the organization should carefully consider perceived meal quality within budgetary constraints.

US Census Bureau에 따르면 65세 이상의 노인 인구의 수는 꾸준히 증가할 것이며 2050년에 이르면 135%가 증가할 것이라고 한다. 미 정부에서는 노인들에 대한 각종 서비스를 제공하고 있으며 그 예산과 함께 각종 프로그램도 증가시키고 있다. 노인 급식프로그램 중 하나인 Meals-On-Wheels 프로그램은 거동이 불편한 노인들에게 도시락 배달을 해주는 프로그램이다. 비상업적 급식프로그램이지만 이를 이용하는 노인들의 만족도와 만족요인을 살펴보는 것은 프로그램을 개선하는데 도움이 되리라 사료된다. 이에 본 연구는 배달급식 프로그램을 이용하는 노인들의 만족도와 만족요인을 밝히고자 수행되었다. 265개의 설문지가 도시락과 함께 배포되어 수거된 202개의 설문지가 데이터 분석에 사용되었으며, 요인분석 결과 음식 품질에 대한 요인, 자원봉사자에 대한 요인, 마지막으로 반응성에 대한 요인이 추출되었다. 이어 실시한 다중회귀분석 결과 세 요인은 모두 전반적 만족도에 유의미하게 영향을 끼치고 있으며, 배달급식프로그램을 이용하는 노인들은 음식의 질이 만족도에 가장 큰 영향을 끼침을 알 수 있었다. 본 연구는 배달급식프로그램과 관련된 연구들을 정리, 통합하고 실증 연구에 기반한 결론과 실무적 시사점을 제시하였으며, 노인 대상 급식프로그램에서 만족도에 크게 영향을 미치는 본연적 요인인 음식의 질의 효과를 이해하게 되었다.
