This research aims to provide a reference material for management plans of small and medium sized companies that manufacture processed marine products(fish cake etc). It addresses significant aspects of and improvement plans for the current condition and management challenges (raw material procurement, product strategies, market opening strategies, etc) of the processed marine product industry in Japan. It also includes interviews with advanced companies in the processed marine product industry in Japan, and sums up the factors that contributed to the success. As to the basis for selecting companies to be interviewed, the interviews were conducted among 6 companies that responded to the interview among the top 50 companies concerning sales in the marine product processing industry in Japan in 2010. Six companies to interview is as follows. "Kamaboko Suzuhiro located in city of Odawara, Kanagawa Prefecture," "Arimuraya located in city of Kagoshima, Kagoshima Prefecture", "NagasakiIchibangKamaboko is located in the city of Nagasaki," Kamaei located in city of Otaru, Hokkaido," "Sugiyo located in city of Sapporo, Hokkaido, "Sugio located in city of Nanao, Ishikawa Prefecture," The aspects that contributed to the success are as follows: first of all, ① the fact that the management philosophy of the founder has been handed down today is reflected as a key sales point in the general business activity. ② the overseas procurement system has been established for the optimal raw material procurement and stable production system. ③ Differentiated, high value added products have been released as the fish and shellfish caught in that area and the local natural environments are made good use of in developing products. ④Stable sales network has been secured including directly managed shops and department stores. Lastly, ⑤ a visualization facility was operated so that common people could visit and experience the manufacturing facility of the company's processed marine products.

世界的な水産物消費の増加の影響、輸入原魚の確保困難、国際的な資源争奪競争などの海外市場の環境変化と、ライフスタイル変化による国内消費の低迷など水産加工業を取り巻く経営環境は厳しさを増している。そこで、本稿では水産練製品製造業の経営支援調査の一環として、水産練製品製造業界の中小企業が経営戦略を策定する際の参考にしてもらうことを目的として、同業界において先進経営を行っているメーカーの商品力や販路・販売力を中心に聞き取り調査を行い、その成功ポイントを明らかにした。本稿の構成は、まず日本の水産練製品製造業の現状について概観した後、同業界のメーカーが抱えている経営課題(原材料調達、商品戦略、販路戦略)を検討した。次いで水産練製品メーカーを対象としたヒアリング調査を実施し、各社においての、商品・販路への取り組みポイントとその他の特徴をまとめた。なお、本稿で取り上げている先進企業は、神奈川県小田原市の｢鈴廣かまぼこ｣、鹿児島県鹿児島市｢有村屋｣、長崎県長崎市｢長崎一番蒲鉾｣、北海道小樽市｢かま栄｣、北海道札幌市｢かね彦｣、石川県七尾市｢スギヨ｣の6 社であり、オリジナル商品や独自の技術力を持ちつつ、経営ノウハウを蓄積してきた企業である。先進水産練製品メーカーの成功ポイントをまとめると以下の通りである。まず、①創業者の経営ポリシーを引き継いでいることをセールスポイント化していた。そして、②海外調達システムを構築することにより、コストや品質面で最適な原料調達が可能になるだけでなく、安定かつ最適生産体制を整えていた。③地魚や地域の自然環境を活用して付加価値を高めたユニークな商品作りは、価格だけでは競争できない差別化につながっていた。④直営店舗やデパートといったチャネルを確保することでブランドステータスを構築していた。最後に、⑤老若男女を問わずかまぼこの製造過程を見学・体験できるように｢見える化｣を図っていた。
