In vivo tests using female C57BL/6 mice were performed with the monascus pigment’s threonine derivative. Changes in the derivative were pursued [1]. After mice were divided into different groups and fed with various feed media. The total cholesterol (TC) concentration of mouse serum was reduced by 8- 16% depending on the pigment concentration level [2]. The supplemental addition of lovastatin reduced the TG level by 19% but the threonine derivative did not at all [3]. Addition of cholesterol to the diet medium increased the HDL and LDL cholesterol levels by 41% and 110% respectively. In case the pigments were supplemented, the LDL cholesterol level decreased by 17.6-25.5% whereas the HDL cholesterol level did not significantly. The atherogenic index (AI) values for supplementation of pigment and lovastatin were reduced by 23.4-26.8% and 39.5%, respectively.
