In this study, we investigated the biological activity of antioxidant and antimicrobial activities hot-water soluble extract of Ecklonia cava, collected from Jeju-island. The reducing activity on the 1,1-Diphenyl-2-picrylhydrazyl(DPPH) radical and Hydroxyl radical and Hydrogen peroxide radicals were determined and 0.5 mg E. cava extract displayed the highest scavenging activity of DPPH and hydrogen peroxide with the value of 81% and 80%, respectively. E. cava extract exhibited the hydroxyl radical scavenging activity dependant manner. The antimicrobial activity of E. cava extract was compaired against the common food spoilage and pathogenic bacteria such as Staphylococcus aureus, Vibrio parahaemolyticus, Escherichia coli , Salmonella typhimurium, Bacillus subtilis, Listeria monocytogenes. E. cava extract had to the strongest antimicrobial activity to Staphylococcus aureus. The E. cava concentration 5mg/disc showed the formation of clear zones in different such as were S. aureus (20mm), V. parahaemolyticus (17mm), L. monocytogenes (12mm), S. typhimurium (13mm).
