In recent black yeast (Aureobasidium pullulans) have been known as microorganisms that produce a large amount of β-1,3-1,6-glucan (exopolysaccharides) and have been used for health foods and cosmetics for some time as a source of exopolysaccharides (EXPs)1). To achieve production of higher EXPs, we have optimized a media. EXPs were precipitated by using ethylalchol from the culture supernatant, after the culture medium was removed from the cell. The maximum glucan concentration was obtained after 80 hours at 30 ℃ and pH 4 using czapek medium. The best carbon source for EXPs is sucrose among six different carbon sources2). There was a distinguishable morphological change in mycelium grown between organic and inorganic nitrogen sources. Especially, organic nitrogen sources play an important role in a lot of EXPs production and morphological change3),4). To investigate the best nitrogen source, several nitrogen sources, namely extract of ashbya gossypii , beef extract, malt extract, corn steep powder, corn steep liquor, yeast extract and soytone peptone, were examined. As a result, extract of a. gossypii was good substitute to yeast extract as organic nitrogen source.
