γ-aminobutyric acid(GABA), which known as nerves transmission material, participates in order to control nerves excitement inhibition and sedative effect, anti-stress effect, blood pressure control, cerebral blood flow improvement, and many other physiological mechanism of human body. Rhynchosia nulubilis seeds were germinated to 2mm-length root at 20℃ after presoaking in 0.05% soluble chitosan and glutamic acid solution for 4hr. GABA content in chitosan- and glutamic acid-treated group was higher than that of control. This study was investigated on the antioxidative enzyme activities and cytotoxicity against human cancer cells of the extract of germinated Rhynchosia nulubilis seeds. The IC50 value of extracts were found to be above 800 ug/ml against all three cancer cells (MCF-7, SNU-601, Calu-6). In the antioxidative enzyme activities, SOD (superoxide dismutase) activity showed 14.75 U/mg proteins and CAT (catalase) activity also displayed the highest activity with 14.75 U/mg protein in the chitosan-treated group.
