Background: Although the antibacterial activities of honey are known in the literature, little is known about the antibacterial activities of commercially available honey in Korea using standard antibacterial testing methods. Objective: We would like to compare the antibacterial activities of honey commercially available in Korea through the standard antibacterial test method (ASTM E2315). Methods: A total of 10 types of honey sold through domestic e-commerce (5 types, Korean acacia, chestnut, polyfloral, sugar-fed, manuka) and each manufacturer (7 types) were purchased and the general bacterial count and antibacterial activities were compared. To investigate the cause of differences in antibacterial activities, a loss-on-drying test was conducted for each product for 24 hours. Additionally, antibacterial tests were conducted on two types of honey with high antibacterial activity against E. coli, S. aureus, and C. albicans. Results: As a result of conducting an antibacterial test on 10 honey products, a difference in log reduction rate of 1.44 (96.37%) to 3.52 (99.97%) was confirmed depending on the product. In this test condition, a significant difference in antibacterial activities was observed due to the place of sale rather than the type of honey (p<0.05). There was no statistically significant correlation between loss on drying of honey and its antibacterial activities (p>0.05). The two types of honey that showed high antibacterial activity showed a high antibacterial activity of log 2 or more (99% or more) against E. coli, and an antibacterial activity of log 1 or less (90% or less) against S. aureus and C. albicans. Conclusion: Through this study, it was confirmed that honey sold domestically showed differences in antibacterial activities according to standard antibacterial test methods, and two types of honey with relatively high antibacterial activity showed high antibacterial activity specifically against E. coli. Additional research appears to be necessary to determine the differences in antibacterial activities of honey commercially available in Korea and the causes of E. coli-specific antibacterial activities.

배경: 벌꿀의 항균 특성에 대해서는 문헌들을 통해 알려져 있지만, 시판되고 있는 벌꿀들에 대한 표준 항균 시험법을 통한 연구는 이루어지지 않았다. 목적: 표준 항균 시험법(ASTM E2315)을 통해 국내 시판되는 벌꿀들의 항균 특성을 비교해 보고자 한다. 방법: 국내 전자상거래(e-commerce)를 통해 시판되고 있는 종류별(5종, 아카시아, 밤, 천연, 사양, 마누카) 및 판매처별(7개) 총 10개의 벌꿀을 구매하여 일반세균수 및 항균 특성 정도를 비교하였다. 항균 특성 차이의 원인을 조사하기 위하여 각 제품에 대한 24시간 동안의 건조 감량 시험을 진행하였다. 추가적으로 항균력이 높은 2종의 벌꿀에 대해 대장균(E. coli), 황색포도상구균(S. aureus), 칸디다균(C. albicans)에 대한 항균 시험을 진행하였다. 결과: 10개 벌꿀제품의 항균 시험을 진행한 결과, 제품에 따라 1.44(96.37%)~3.52(99.97%) 로그감소율 차이를 확인하였다. 본 시험조건에서는 벌꿀 종류보다 판매처로 인한 항균 특성의 유의한 차이가 관찰되었 다(p<0.05). 벌꿀의 건조 감량과 항균 특성은 통계적으로 유의미한 상관성을 보이지 않았다(p>0.05). 항균력이 높게 나타난 2종의 벌꿀은 대장균에서는 로그 2 이상(99% 이상)의 높은 항균력을 나타내었고, 황색포도상구균 및 칸디다균 에서는 로그 1 이하(90% 이하)의 항균력을 나타내었다. 결론: 본 연구를 통해 국내 시판되는 벌꿀들이 표준 항균 시험법에 따라 항균 특성의 차이를 보이고 있음을 확인하였고, 항균력이 상대적으로 높은 벌꿀 2종은 기존 연구와 같이 대장균에 특이적으로 높은 항균력을 보였다. 국내 시판되는 벌꿀의 항균 특성 차이와 대장균 특이적인 항균 특성의 원인에 대해서는 추가적인 연구가 필요할 것으로 보인다.
