This study was carried out to investigate the physiological activities of the ethanol extracts from 3 strains of Agaricus bisporus. In addition, the β-glucan and polyphenol contents were also measured. As a result, the highest contents of total polyphenol contents in 3 strains showed 102.03 mg% but β-glucan contents showed little contents with ranged from 3.99 to 8.05%. Inhibitory effects of nitric oxide production and α-amyloglucosidase activity ranged from 60.38 to 79.31% and 45.18 to 49.51%, respectively. The highest inhibitory activities on DPPH radical, Nitrite and angiotensin I converting enzyme were 37.05, 28.33 and 11.85%, respectively. Lastly, the cytotoxic activities of ethanol extracts from all the strains on A549, HT-29, and HeLa cell were shown the highest effect in A549 cell.
