｢음식보｣는 18세기에 전라남도에서 필사된 한글 음식조리서이다. 이 문헌은 전라도에서 발굴된 첫 번째 음식조리서로서 서지학적 관점이나 조리학적 관점에서 기존 연구가 이루어졌다. 본고는 국어사적 관점에서 이 문헌에 나타나는 희귀한 음식명과 기존 연구에서 자세히 논의되지 않은 음식명에 한정하여 살폈다. 먼저 ｢음식보｣의 음식명 목록이 다른 한글 음식조리서에 출현하는지 비교하여 제시하였다. 술 명칭으로는 ‘태화듀’, ‘ᄇᆡᆨ화듀’, ‘ᄇᆡᆨ병쥬’, ‘진향쥬’, ‘ᄃᆞᆫ졈쥬’를 살폈다. 그리고 결락된 명칭이 ‘예듀/예쥬’이고, ｢음식보｣에 기록된 음식명은 총 39개이며 중복된 1개를 제외하면 38개임을 밝혔다. 술 이외의 음식명으로는 ‘긔증편’, ‘교의상화’, ‘뉴화젼’을 살폈다. 이를 통해 ｢음식보｣의 국어사적 가치를 밝히고자 하였다.

‘Eumsikbo’(음식보) is a Korean cookbook transcribed in South Jeolla Province in the 18th century. As the first cookbook discovered in the Jeolla Province, it has been studied from both philological and culinary perspectives. This paper examines the rare and valuable vocabulary appearing in this document from a Korean linguistic perspective, focusing on the names of foods. The food names include ‘Taehwaju’, ‘Baekhwaju’, ‘Baekbyeongju’, ‘Jinhyangju’, ‘Danjeomju’, and ‘Yeju’(alcohol); ‘Gijeungpyeon’ and ‘Yuhwajeon’ (rice cake); and ‘Gyoui sanghwa’ (miscellaneous food). Through these vocabulary, this paper aims to elucidate the historical and Korean linguistic value of this document.
